Coleslaw with apple cider vinegar

Ingredients

  • 1/2 finely chopped green cabbage
  • 2 carrots, grated
  • 1/4 cup apple cider vinegar
  • 2 tablespoons sugar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Preparation

Mix the cabbage and carrots in a large bowl.
In a small bowl, whisk together the vinegar, sugar, oil, salt and pepper.
Pour the dressing over the vegetables and mix well.
Refrigerate for at least 1 hour before serving.
